These delicious light and fluffy almond pancakes are a delicious and nutritious breakfast or snack option. They're naturally gluten-free and dairy-free, making them perfect for those with dietary restrictions.

Ingredients
  

  • 1 Medium Ripe Banana
  • 1 Egg
  • ½ Cup Almond Flour
  • ¼ Tsp Baking Powder
  • Pinch of Ground Cinnamon

Instructions
 

Mix the Batter:
  1. In a bowl, mash a ripe banana along with an egg and mix well.
    1 Medium Ripe Banana
  2. Stir in almond flour, baking powder, and cinnamon until combined.
    ½ Cup Almond Flour, ¼ Tsp Baking Powder, Pinch of Ground Cinnamon
  3. Let the batter rest for 10 minutes.
Cook the Pancakes:
  1. Heat a non-stick pan over medium-low heat.
  2. Pour batter into the pan.
  3. Cook for 2-3 minutes per side, or until golden brown.

Serve the almond fluff pancakes with your choice of fruit or yogurt or favorite toppings.
