Having some boiled potatoes as leftovers and you have no idea what to do with them?
This simple, easy and refreshing salad is here to save your day. Made with boiled potatoes, dry mint, some lemon juice and olive oil, you will never regret it.
This salad is very popular in Lebanon, it is refreshing and makes you feel satisfied after having it.

Ingredients
  

  • 3 Boiled Potatoes
  • 1 Garlic Clove
  • 1 Tsp Dry Mint
  • Salt To Taste
  • ¼ Cup Lemon Juice
  • 3 Tbsp Olive Oil

  • 1 Bowl

Instructions
 

Prepare the sauce:
  1. In a bowl, crush the garlic with salt.
    1 Garlic Clove, Salt, ¼ Cup Lemon Juice, 3 Tbsp Olive Oil
  2. Add the lemon juice and oil.
Combine ingredients:
  1. Cut the potatoes into medium cubes and add them to the sauce.
    3 Boiled Potatoes
Season:
  1. Season the potatoes with dry mint.
    1 Tsp Dry Mint
Mix:
  1. Mix the ingredients together.

Notes

Serving suggestions: 

You can serve this refreshing potato salad with some vegetables like cucumber, tomatoes or radish, along with a piece of bread. Or you can enjoy it all alone.
