
Simple Winter Soup
This is a simple, satisfying soup that's perfect when you need something warm and easy. Sauté Aromatics:
- In a large pot or skillet, heat the olive oil over medium heat.2 Tbsp Olive Oil
- Add the chopped onion and sauté for 5–7 minutes, stirring occasionally, until it becomes translucent and softened.1 Medium Onion

Add Vegetables and Season:
- Add the chopped carrots and potatoes to the pot and stir.Cover and simmer for 5 minutes.1 Medium Carrot, 2 Small Potatoes

- Add the chopped tomato, minced or chopped garlic and sweet corn.1 Tomato, 2 Garlic Gloves, 1 Cup Sweet Corn
- Stir well to combine all the vegetables together.

- Season the Mixture: Add the salt, black pepper, paprika, ginger powder and cumin to the vegetables.½ Tsp Ginger Powder, 1 Tsp Paprika, ½ Tsp Salt, ¼ Tsp Black Pepper, ½ Tsp Cumin

- Stir well and simmer for another 5 minutes.
Simmer Soup:
- Pour in the vegetable broth or water.1 Lt Water or Vegetable Broth
- Bring the mixture to a boil, then immediately reduce the heat to low.

- Cover the pot and simmer for 30 minutes, or until the carrots and potatoes are fork-tender.
Blend and Finish:
- Turn off the heat. If you prefer a smooth soup, use a hand mixer to blend the vegetables until the soup reaches your desired consistency.
- Taste and adjust the salt and pepper as needed.

Notes
- If you are not using a hand mixer to blend your soup, alternatively, let the soup cool slightly and blend in batches in a standard blender.
- If you are using fresh ginger, grate it finely and add it along with the garlic in step 1.
