Lazy Cake is a beloved no-bake dessert that's popular in many parts of the Middle East and Europe. Think of it as a decadent chocolate fudge, loaded with broken biscuits (like digestive or rich tea), then chilled until firm. The biscuits soften just enough to become cake-like, while still offering a delightful chew and crunch. It's a fantastic combination of textures and deep chocolate flavor, all without ever turning on your oven.

Ingredients
  

  • ¾ Cup Sugar
  • ¼ Cup Cocoa Powder
  • ½ Cup Milk
  • 115 G Butter
  • 100 G Chocolate Plain
  • 500 G Biscuits Digestive or Rich tea
  • Whiskey, Liquor, Vanilla or Instant Coffee Optional

Instructions
 

Prepare the Biscuits:
  1. In a large mixing bowl, break the biscuits into rough, bite-sized pieces. Aim for a mix of smaller crumbs and larger chunks for good texture. Set aside.

Prepare the Chocolate Sauce:
  1. In a small pot or medium saucepan, combine the sugar, unsweetened cocoa powder, and milk.
    ¾ Cup Sugar, ¼ Cup Cocoa Powder, ½ Cup Milk
  2. Stir well with a whisk until all ingredients are thoroughly combined and there are no lumps of cocoa.
  3. Transfer the pot to medium-low heat. Continue stirring gently.
  4. When the mixture becomes warm and starts to thick slightly, add the butter (cut into pieces helps it melt faster). Continue stirring until the butter has completely melted and the mixture is smooth.

  5. Remove the pot from the heat. Immediately add the chopped dark chocolate (or chocolate chips).

  6. Stir vigorously until the chocolate has fully melted and the sauce is completely smooth and glossy.
  7. Optional: If using, stir in the whiskey, liquor, vanilla or instant coffee (dissolved with 1 to 2 tablespoons of warm water) at this stage for an additional layer of flavor.

Combine Sauce and Biscuits:
  1. Allow the chocolate sauce to cool slightly (about 5-10 minutes – it should still be pourable but not scalding hot, which can make the biscuits too soggy).
  2. Pour the slightly cooled chocolate sauce over the broken biscuits in the large mixing bowl.
  3. Using a sturdy wooden spoon or a rubber spatula, gently but thoroughly mix until all the biscuit pieces are evenly coated with the chocolate sauce. Be careful not to crush the biscuits too much.
Shape and Chill the Mixture:
  1. To make a roll (salami shape): Pour the entire mixture onto a large piece of parchment paper.
  2. Using the parchment paper to help, shape the mixture into a compact log or roll. Roll it up tightly in the parchment paper, twisting the ends like a candy wrapper to seal it.
  3. If using another mold (e.g., loaf pan, square cake pan, food container): Line the inner surface of your chosen mold completely with parchment paper, leaving an overhang on the sides for easy removal. Pour the chocolate biscuit mixture into the mold. Using the back of a spoon or your hands (lightly greased if sticky), press the mixture down firmly and evenly so it takes the desired shape and becomes compact.
  4. Transfer the shaped mixture to the refrigerator. Let it chill and set completely for at least 4 hours, or preferably overnight, to ensure it becomes firm enough to slice neatly.
