Ingredients
  

  • 1 Medium Onion Chopped
  • 1 Medium Carrot Chopped
  • 2 Small Potatoes Diced
  • 1 Tomato Diced
  • 2 Garlic Gloves
  • 1 Cup Sweet Corn
  • ½ Tsp Ginger Powder
  • 1 Tsp Paprika
  • ½ Tsp Cumin
  • ½ Tsp Salt
  • ¼ Tsp Black Pepper
  • 2 Tbsp Olive Oil
  • 1 Lt Water or Vegetable Broth

Instructions
 

Sauté Aromatics:
  1. In a large pot or skillet, heat the olive oil over medium heat.
    2 Tbsp Olive Oil
  2. Add the chopped onion and sauté for 5–7 minutes, stirring occasionally, until it becomes translucent and softened.

Add Vegetables and Season:
  1. Add the chopped carrots and potatoes to the pot and stir.
    Cover and simmer for 5 minutes.

  2. Add the chopped tomato, minced or chopped garlic and sweet corn.
    1 Tomato, 2 Garlic Gloves, 1 Cup Sweet Corn
  3. Stir well to combine all the vegetables together.
  4. Season the Mixture: Add the salt, black pepper, paprika, ginger powder and cumin to the vegetables.
    ½ Tsp Ginger Powder, 1 Tsp Paprika, ½ Tsp Salt, ¼ Tsp Black Pepper, ½ Tsp Cumin
  5. Stir well and simmer for another 5 minutes.
Simmer Soup:
  1. Pour in the vegetable broth or water.
    1 Lt Water or Vegetable Broth
  2. Bring the mixture to a boil, then immediately reduce the heat to low.
  3. Cover the pot and simmer for 30 minutes, or until the carrots and potatoes are fork-tender.
Blend and Finish:
  1. Turn off the heat. If you prefer a smooth soup, use a hand mixer to blend the vegetables until the soup reaches your desired consistency.
  2. Taste and adjust the salt and pepper as needed.

Notes

  • If you are not using a hand mixer to blend your soup, alternatively, let the soup cool slightly and blend in batches in a standard blender.
  • If you are using fresh ginger, grate it finely and add it along with the garlic in step 1.
